Dark and smooth, this dark German lager marries drinkability with a beautiful malty flavor.
Happy October! This imperial-style ale is ripe with pumpkins and spice. Yes, it’s a great beer to drink when watching “It’s the Great Pumpkin, Charlie Brown,” but no, you can’t count this beer as a serving of fruits and veggies.
An amber lager, this is a pale, malty lager that is a staple at Oktoberfest.
Juicy. That is the best description for the new style of beer called New England IPA. True to style this beer is brewed with no hops in the boil. Then a boatload of Citra, Mosaic, Centennial and Galaxy hops are used after the boil and for dry hopping. The result is a beer with intense aroma and flavors of citrus and tropical fruits. You don’t have to wait in line for this beer at Hopshire and you can have a couple glasses at the bar.
In collaboration with Hollenbeck’s Cider Mill in Virgil, NY we are proud to present our first hard cider. Using 100% Northern apples this cider is dry with great apple nose and flavor.
Hazy like the foggy forests of the upper West Coast, this IPA is more juicy than bitter. Sweet and refreshing, it just wants to be loved. Just like all you middle children out there.
A hop farm needs a big American IPA. We start with a solid malt base of pale and caramel malts and then add hops (a lot of them!) five times during the boil. We don’t stop there. We add to the serving tank in a process we call “Laced with hops”. Hopheads – find your NearVarna.
This is a double dry-hopped pale ale with a fall fruitiness that’ll make you sing,

Crisp and mildly hoppy, this Ithaca take on a German Pilsner lets you kick back in the summer shade.
A malty brown ale fermented with Scottish Edinburgh yeast. Flaked oats and six different barley malts including chocolate, dark crystal and amber malts are used in this rich tasting ale. Lightly hopped to let out the sweetness of the malt. A fun beer to make and a fun beer to drink.

A super-smooth IPA, this piney-citrus monster was released on Father’s Day 2024.
Nothing says summer like the smell and taste of fresh raspberries. We have captured that flavor in Brambles raspberry wheat beer. This beer uses NY grown barley and wheat malts and nearly 50 pounds of pure raspberry puree. Unfiltered and no preservatives like all of the Hopshire beers. Enjoy!
Starting off on a path of rich and bold, this shapeshifter finishes with a refreshing grapefruit zest.
Keller means cellar: This German festbier’s time in the tank has been shortened (e.g. the cellar), making it a Kellerbier. This leaves the beer hazier than a normal pilsner, but with that great refreshing pilsner taste that you love.
Pronounced “oh-HALL-ah,” this light, crisp lager is infinitely drinkable on those long, hot summer nights.
Not your average Belgian ale, this brew is crisp, not too sweet, and rings in a complex, dry finish.
